Ramadan Day 29 ✨🌙Baqsome or Baksum Kurdish Coconut and Sesame Seed Cookies

1. Preheat the oven to 425°F.
2. In a mixing bowl combine the eggs, sugar and oil, turn the mixer on and beat for a couple of minutes until smooth.
3. Next add in the baking powder, coconut and flour. Turn the mixer on again with the paddle attachment and mix until well combined.
4. Form approximately 1 to 2 tablespoon of dough into fingers, shaped into logs or circles (Dip fingers in oil before shaping to prevent the dough from sticking to your fingers) Roll logs in the sesame seeds, to coat on all sides.
5. Place cookies on a baking tray lined with parchment paper and bake for 12 to 14 minutes until lightly golden.
6. Remove them to a wire rack to cool completely.
7. Now pour yourself a cuppa chai (tea) and enjoy.
